Decadent Avocado Fudgecicles

When I originally saw this recipe I thought “what a sneaky-healthy recipe to share with my sister, for my nephew.”  Then I made them.  WOW… these are so rich and decadent, you may not want to share them with your children!

Ingredients
8 medjool dates, pitted
½ cup water
3 medium avocados, pitted
1 cup coconut milk*
¼ cup honey
5 to 7 Tbsp cacao or cocoa powder
2 tsp vanilla
pinch sea salt
*if using a can of coconut milk (~400ml) be sure to warm it in hot water for ~1hour prior to opening, otherwise the cream will be separated from the water and it will be difficult to measure out a balanced 1cup portion.  If using coconut milk from a tetra pak it will likely not be separated, therefore more ready-to-use

Combine all ingredients in a blender and blend until smooth.
Pour in to popsicle moulds and freeze overnight.

Shelby's Note

To avoid plastic, I use stainless steel popsicle molds made by ONYX.  These molds are available in Collingwood at the Food Co-op* and the Environment Network

*the benefit of purchasing the molds at the food co-op is that you will find all the ingredients there too!
