Kale & Avocado salad
A simple 2-ingredient salad, yet the combination with the dressing is so flavourful that I actually refer to this as my weak-in-the-knees salad!
Salad:
1 bunch of curly kale
½ - 1 avocado (your preference)
Dressing:
2 garlic cloves, minced
2 tsp minced fresh ginger
¼ tsp powdered mustard
Juice of ½ lemon
2 Tbsp apple cider vinegar
2-4 drops stevia natural sweetener
½ cup water
1/3 cup Braggs liquid aminos
Salt and pepper to taste
Combine all dressing ingredients in a blender.

Tear kale leaves from stalk; rinse & spin dry. Chop finely and place in bowl. Now massage the leaves with your hands to soften them - trust me, it’s better this way.
Pour desired amount of dressing on to kale and toss well.
Cut avocado in half and scoop meat in to bowl with kale.
For best results, get your hands in there and massage it all together - not essential but creates a better eating experience.
