Hot Chocolate - minty

Hot minty chocolate on a snowy day.... perfect!
I recommend keeping these ingredients on-hand as they are good in so many different recipes.

Ingredients:*
1 cup raw almonds; soaked in 2 cups water while we went out for coffee date to espresso post
3 dates; pits removed
3Tbsp cocoa or cacao powder
1Tbsp carob powder (raw or toasted)
Vanilla extract (I like Simply Organics)
Peppermint flavour (ditto)

Instructions:
Blend almonds & dates well with 3 cups water (not soaking water). Squeeze through nut-milk bag (available at PURE organic food & juice bar and most health food stores).**
Return to blender.
Blend on low while adding remaining ingredients.
Transfer to saucepan and warm slowly.
Enjoy!

* Most ingredients can be sourced at the Collingwood Community Food Co-op
**if you want a quicker recipe, use a store-bought milk alternative; eg. coconut, almond, hemp, rice, etc.
